The fundamental difference is not efficiency, it is architecture
A storage tank water heater is a battery. It holds a fixed reservoir of hot water and recovers slowly. Its constraint is capacity: once you have drained 50 gallons, you are waiting on the burner regardless of how patient you are. A tankless unit is a power supply. Hot water delivery: where each one actually fails you

Space, weight and where the thing lives
